I've heard talk that the 2.1 con rods aren't as good as the 1.9 rods and that 1.9 rods can be used to replace them. I'm assuming then that the pistons also need to be replaced with the 1.9 pistons. I have both a 1.9 and 2.1 block, and I'm rebuilding the latter. My question is do the 1.9 rods need to be resized at the big end for the 2.1 crank? And should the new bearings be for a 1.9 or 2.1?

The 2.1L rods are perfectly fine; rather it's the connecting rod bolts at the big end that should be swapped out with the versions from the 1.9L

Well that helps, but since my 1.9 pistons and cylinders are in better shape than the stock 2.1, can they be swapped in as is?

Can't swap pistons, only rods, 2.1 has longer stroke.

1.9 rod bolts are the upgrade for the 2.1 rods.
Mixing all the other internals will build a gernade.
