I've got a 1600 DP engine that needs rebuilt. My question is, are rebuilding these engines that hard? All I'm wanting to change is the cylinders and pistons. I want to make it a 1641. A local builder told me today that it's really not that easy because of the measurements when installing bigger or different cylinders. I've rebuilt smallblock chevys in the past but never a vw. Am I better to leave it to the experts?

It's not that hard but totally different than building Chevy V8s.

With a good machinist, some basic hand tools, a few specialty tools and a dial indicator you can do it. There are a few books and instructional videos you can get.

the 1641 cylinder is the same as the 1600 on the od so no "special "messuring needed. not a lot different than a chevy, flywheel just uses 1 bolt, the end play is set with shims and the "block" is two peices.3 main bearings are solid round not split and just slide on the crank. the pushrods are in tubes.for me there much easyer than a chevy, there parts are light as a fart. if you can do a chevy and it work, you should be able to do a vw with out any probalm at all.

changing the cylinders is easy, takes about an hour

Properly rebuilding the engine is hard because all the parts are crap and don't fit right, and what you do have is all worn out, complain, whine, ect.
