I would like to add a second battery under the drivers seat.
The "kit" that gowesty sells appears to consist of only two wires.
Where do the wires plug in? The negative pole of the battery obviously gets connected to the ground, but where does the positive wire plugs in????

Most Vanagon Westfalias have a relay in place in the storage / 2nd battery box. To add the second battery, you need a battery , a short ground cable, a stamped steel battery terminal with a stud and nut to connect wires to (Autozone ones come with a couple of large crimp or solder connecters on the package) and some #10 wire and crimp connectors. You should also get the correct battery hold down from VW (same as on the 1st bat.) a battery sliding around can break things and short out.
Install the bat. with the pos post toward the center of the car, shorter wiring. Use the battery hold down bolt as the ground connection for the ground cable.
The relay has 2 red wires comming off that go to the fusebox on the door piller. 1 is powered all the time, this runs the waterpump, display panel, etc. the other is only powered when the van is running, this is for running the fridge on 12v. Remove both wires and attach to the pos bat. terminal , run a new (10ga) wire from the bat terminal to the relay terminal that fed the fridge . The 2nd bat will charge when driving but be isolated when not running
