I don't do this often and am probably overthinking it, but for both the drivers side and passenger side spring plate adjustment if I want the ride height to increase then I move the spring plate closer to the ground when adjusting at the torsion bars, correct?

Correct.
When looking at the left (driver's side), turn the spring plate clockwise on the torsion bar.
CCW for the other side.
