| I don't do this often and am probably overthinking it, but for both the drivers side and passenger side spring plate adjustment if I want the ride height to increase then I move the spring plate closer to the ground when adjusting at the torsion bars, correct? |

Correct.
When looking at the left (driver's side), turn the spring plate clockwise on the torsion bar.
CCW for the other side.
