Found some 15 x 7 with 2" offset, from what I've read it's a no go in rear even with short axles.

I would not say that a 15”x7” in the rear is a no go. A positive 2” offset wheel might have a clearance issue between the inside of the tire/wheel and the spring plate. The correct size wheel spacer should do the job without the tire/wheel pertruding outside the fender. I had Porsche 16”x 8” wheels with 225/45 tires on the rear of my 67 with stock fenders at one time.
