It seems like the last 31 years have made her rear end a little tired, and she's squatting a bit in the back. I was thinking of tackling the adjustment of the torsion bars to try to get her back up to a normal stock height.

Anyone done this before? Is it hard? Anything I should plan on replacing while I'm at it? Any advice is good.

SOUNDS LIKE THE TORSION BARS ARE LOSING SOME OF THERE TENSION. YOU COULD RE INDEX THEM BUT I THINK IT WILL HAPPEN AGAIN RELATIVELY SOON. yOU MIGHT WANT TO INVEST IN SOME NEW TORSION BARS , RUBBER GROMMETS AND NEW SHOCKS, PREFFERABLY NOT KYB.

the first thing i would do is check the condition of the rear shocks. four bolts and they're out. if you don't know wut to look for, just ask. of course, if they're bad replace them. while that will help, it might not do it for you. in which case, i would suggest you check out AUSSIEBUG's site, he goes into great detail on how to adjust them.
if you're interested in checking his site out, search for one of his posts, and you will find the site's addy in the signature line below the post...
