I managed to source a very close match.
3-M DI-NOC Walnut vinyl from Metro Restyling.

I bought it to recover a glovebox. Not perfect but close.
The rest of the dash covering is original.
I would image if the dash surface is prepped properly this product would look nice.

Looks like kingkarmann had success with applying self-stick vinyl to a flat glove box door, but using similar stuff on the whole dash might be a bit trickier. Seems like you'd need several sets of hands when installing to keep the material from wrinkling or trapping air bubbles underneath. The compound curves at each end of the dash could give you trouble too.
The replacement wood-grain plastic dash faces available from all the usual suppliers are fairly rigid and pretty easy to install...even for one person working alone. _________________ '63 Ragtop (current)

Check out rbsurfguy's build thread for another option, using 3M DINOC vinyl wrap wood look.
He discusses in detail the installation, and has several photos to show how it looks. It's a great looking option and looks as good in person as it does in the photos.
