What are possible causes for the A/C to cut out on its own after running for a short bit?

I'm pretty sure when the high-speed rad fan comes on it shuts the A/C off, but unless you are in extreme heat or have cooling system issues that shouldn't be a regular occurance.

You don't give us any details..... Year etc....
But....

Low charge level, though it shouldn't even kick on....

A blockage creating high pressure,
A bad pump,
Icing up,
Bad electrical switch, wire or connection,

What year?
What engine?
R12? r134a? R12a?

Factory in rear?
Aftermarket up front?

Put some gauges on it, that will speak volumes.

I've also read about a disconcertingly high quantity of new expansion valve horror stories.....

Exactly why i never change one 'because it's old' ,only had to take 1 out, cleared plugged strainer, worked normal after that. 5 wbxs so far, also ALL other brands excepy a plymouth voyager ( total pos) never had a failed one, sp personally i think 'change it' is in the bs catagory. As usual no warranty is offered at this time. Gas a bit low can cause shutting off too.
